Baby Pearl Tapioca

Making your own Tapioca pudding is simpler than you might think.    Prepare the morning of for a nice dinner-time treat.

2/3 C. Tapioca

2/3 C. Water

4 C Milk

1 1/2 C. Sugar

2 Eggs, beaten

8-9 oz. Cool Whip (optional)

3 oz. Cream Cheese (optional)

Soak tapioca in water for 30 minutes.  Mix the first five ingredients in a double boiler.  Cook until thick.  Cool well before adding Cool Whip or cream cheese.  (If using large tapioca, soak overnight.)
